A quick seafood dish packed with buttery, garlicky and mildly spicy flavours.

Ingredients

  • 500 g cleaned and deveined shrimp
  • 3 tbsp butter
  • 1 tbsp oil
  • 6–8 garlic cloves, finely chopped
  • 1 tsp chilli flakes
  • ½ tsp black pepper
  • ½ tsp paprika or Kashmiri chilli powder
  • 1 tbsp lemon juice
  • 1 tbsp chopped coriander or parsley
  • Salt, to taste

Preparation

  1. Clean, devein and pat the shrimp dry. Season with salt and pepper.
  2. Add oil and 1 tbsp butter to a pan over medium-high heat.
  3. Add the shrimp and cook for about 1–2 minutes per side. Remove them from the heat as soon as they turn pink and opaque to prevent them from becoming rubbery.
  4. Add the remaining butter. Add chopped garlic and sauté for about 30–40 seconds until fragrant.
  5. Stir in chilli flakes and lemon juice.
  6. Return the shrimp to the pan and toss well for 1–2 minutes, coating them in the garlic butter.
  7. Garnish with chopped coriander or parsley and serve hot.
